He’s up early like any great baker should be, usually the first of our Kitchen Brigade to arrive in the wee hours of the morning to start the day and the week’s baking.
He’s hard to miss when you dine with us, tall 6’ 3” stature in Chef’s whites quietly toiling over every last detail of the sweet confections he hand crafts.
He is our Pastry Chef, Bruce Melnichuk, and this is today’s Elmhirst’s Resort Staff Bio.
Born and raised in Toronto, Chef Bruce began his career in hospitality at George Brown College where he earned his Red Seal papers with a specialization in the Baking and Pastry Arts.
He has worked at many prestigious places from the Holiday Inn Toronto Airport, Glen Abbey Golf Course, Cedarbrook Lodge, the Skyline Hotel, and York University. All the time perfecting & honing his craft working at times as both Sous Chef and Pastry Chef.
Word has it the lure of rural life beckoned, and Bruce left the big city and gave up the culinary life for a time, settling iin Colbourne ON to become a farmer.
Stirring & sifting soon turned to cutting firewood, milling lumber, milking cows and ploughing fields.
As fate would have it, an opportunity knocked in 2005 with Bruce accepting a position as Pastry Chef at Elmhirst’s Resort.
Much to our delight & our guests, Farmer Bruce became Pastry Chef Bruce once again.
Chef Bruce is well known for his wide range of specialized areas, including chocolate and confections, tarts and pastries, artisan breads and of course his signature DOUGHNUTS which incidentally, perhaps could be the next progression in the Kawarthas Butter Tart Tour ?
